Ingredients
  

Bone Marrow

  • 1 quart Water
  • 3 tbsp Salt

Eggs

  • 6 ea Egg yolks
  • 3 cups Salt
  • 1 cup Sugar

Butter

  • 8 tbsp roasted bone marrow
  • 16 tbsp salted butter
  • 2 cured egg yolks
  • 2 tsp parsley
  • 4 tsp shallots
  • 2 tsp anchovie paste
  • 2 tsp garlic paste or (2 cloves garlic)
  • 1 pinch salt

Instructions
 

Bone Marrow

  • Fill up a container with water and salt. Soak the bones in the salt water for at least 3 hours, preferably overnight. Once all the blood has been extracted and the bone marrow is white, place the bones under a broiler for 10-12 minutes.

Cured Egg Yolks

  • Mix the salt and sugar into a bowl and combine thoroughly.
  • Separate the yolks from the whites, and remove the little white cord from the yolk.
  • Place half the salt/sugar mixture into a flat pan and make divots for the yolks to sit in. Gently place the yolks in the divots, and completely bury using the remainder of the salt/sugar mix.
  • Place the eggs yolks, uncovered, in the fridge for 5-7 days. Take them out of the mixture very carefully and rinse them in water to remove all salt/sugar.
  • Place them on a wire rack in an oven on the lowest setting or a dehydrator for about two hours.

Butter

  • Place the butter, bone marrow, garlic, anchovie paste, parsley, shallots, shaved egg yolk (the whole yolk), and a pinch of salt into a container and blend until it's a fine paste. A stick mixer works well, or a blender on low.

Butter, steak and bone marrow, what can be better than that? Today I show you what might be the absolute best steak recipe I’ve made this year. This butter of the Gods made this wonderful filet mignon melt in my mouth. We also tried cured egg yolks that made the steaks fit for royalty. As a side dish I decided to compliment this wonderful steaks with some nice garlic fries that were very easy to make. Give this one a try guys, go out grilling and you will love it!
